Ingredients
4 medium zucchini
500g minced meat
1 medium chopped onion
2 minced garlic cloves
1 chopped red pepper
1/2 cup of tomato sauce
1 cup grated mozzarella cheese
Salt and pepper to taste
Olive oil for sautéing
Directions
- Preheat the oven to 200°C.
- Cut the zucchini in half and scoop out the core with a spoon.
Book the zucchini halves. - In a large pot, heat the oil over medium-high heat and add the chopped onion and garlic.
Sauté until soft and golden. - Add ground beef and cook until browned.
Season with salt and pepper to taste. - Add chopped bell pepper and tomato sauce.
Cook for a few more minutes. - Add half of the grated mozzarella cheese to the ground beef mixture.
Stir until the cheese is melted. - Stuff the zucchini halves with the ground beef mixture.
- Place the stuffed zucchini in a greased baking dish and cover each one with the other half of the grated mozzarella cheese.
- Bake for about 25 to 30 minutes, or until the courgettes are tender and the cheese is golden brown and bubbly.
- Serve hot and enjoy!
