Ingredients

  • 4 medium zucchini

  • 500g minced meat

  • 1 medium chopped onion

  • 2 minced garlic cloves

  • 1 chopped red pepper

  • 1/2 cup of tomato sauce

  • 1 cup grated mozzarella cheese

  • Salt and pepper to taste

  • Olive oil for sautéing

Directions

  • Preheat the oven to 200°C.
  • Cut the zucchini in half and scoop out the core with a spoon. 
    Book the zucchini halves.
  • In a large pot, heat the oil over medium-high heat and add the chopped onion and garlic. 
    Sauté until soft and golden.
  • Add ground beef and cook until browned. 
    Season with salt and pepper to taste.
  • Add chopped bell pepper and tomato sauce. 
    Cook for a few more minutes.
  • Add half of the grated mozzarella cheese to the ground beef mixture. 
    Stir until the cheese is melted.
  • Stuff the zucchini halves with the ground beef mixture.
  • Place the stuffed zucchini in a greased baking dish and cover each one with the other half of the grated mozzarella cheese.
  • Bake for about 25 to 30 minutes, or until the courgettes are tender and the cheese is golden brown and bubbly.
  • Serve hot and enjoy!
