Make a Dobradinha using the ingredients below and follow the instructions for preparation.

Ingredients

  • 500g beef tripe, cleaned and cut into strips

  • 500g of mocotó (ox foot) cut into pieces

  • 2 smoked calabrese sausages, sliced

  • 2 tablespoons of vegetable oil

  • 1 large onion, chopped

  • 4 garlic cloves, minced

  • 2 ripe tomatoes, chopped

  • 2 bay leaves

  • 1 green pepper, chopped

  • 1 bunch of parsley (parsley and cilantro), chopped

  • Salt and pepper to taste

  • Enough water for cooking

Directions

  • In a large pot, place the tripe and the mocotó and cover with water. 
    Bring to a boil over high heat and simmer for 10 minutes. 
    Run the water and book.
  • In another large pan, heat the vegetable oil and add the onion and garlic. 
    Saute over medium heat until golden.
  • Add the tripe, the mocotó, the pepperoni sausage, the tomato, the bell pepper and the bay leaves. 
    Season with salt and pepper to taste. 
    Stir well to mix the ingredients.
  • Cover the ingredients with water and cook over low heat for approximately 2 hours, or until the tripe and mocotó are soft and cooked.
  • During cooking, add more water as needed to keep the broth at the desired consistency.
  • When the tripe is cooked, adjust the seasoning, if necessary, and add the chopped parsley. 
    Mix well.
  • Remove bay leaves before serving.
