Ingredients
500g beef tripe, cleaned and cut into strips
500g of mocotó (ox foot) cut into pieces
2 smoked calabrese sausages, sliced
2 tablespoons of vegetable oil
1 large onion, chopped
4 garlic cloves, minced
2 ripe tomatoes, chopped
2 bay leaves
1 green pepper, chopped
1 bunch of parsley (parsley and cilantro), chopped
Salt and pepper to taste
Enough water for cooking
Directions
- In a large pot, place the tripe and the mocotó and cover with water.
Bring to a boil over high heat and simmer for 10 minutes.
Run the water and book. - In another large pan, heat the vegetable oil and add the onion and garlic.
Saute over medium heat until golden. - Add the tripe, the mocotó, the pepperoni sausage, the tomato, the bell pepper and the bay leaves.
Season with salt and pepper to taste.
Stir well to mix the ingredients. - Cover the ingredients with water and cook over low heat for approximately 2 hours, or until the tripe and mocotó are soft and cooked.
- During cooking, add more water as needed to keep the broth at the desired consistency.
- When the tripe is cooked, adjust the seasoning, if necessary, and add the chopped parsley.
Mix well. - Remove bay leaves before serving.
