Sweet Potato Jam (Homemade Brown Glaze)

Ingredients
1 kg of sweet potatoes
400 grams of sugar
1/2 cup (tea) of water
2 envelopes of unflavored gelatin
1 tablespoon vanilla essence (optional)
1 cup (tea) of sugar (180 grams)
Directions
- Chop the peeled potatoes, place them in a pan with water to cover and cook until soft.
- Blend the cold cooked potatoes with the sugar in a blender or food processor and transfer to a container.
- Mix the gelatin with 1/2 cup (tea) of water and set aside to hydrate.
- Place the sugar in a pan, heat and let it melt until it forms a caramelized syrup.
- Add the sweet potato puree to the pan with the caramelized syrup and stir over low heat until smooth.
- Add the hydrated gelatin, vanilla essence and stir the sweet constantly over low heat until it comes away from the bottom of the pan.
- Pour the sweet into a mold with the sides and bottom greased with oil and cover with plastic wrap in contact with the surface.
- Wait for the sweet to cool completely at room temperature, remove the plastic, unmold and it is ready to eat.
