Grandma’s Sprinkle Pastry Cake that melts in your mouth

Ingredients
3 eggs
1 1/3 sugar (130 g)
1 3/4 cup sweet sprinkles (150 g)
Zest of 1 lemon (optional)
Directions
- Place the eggs in the mixer and beat until foamy;
- Add the sugar and beat for 10 minutes until it’s very off-white;
- Add the lemon zest and the sprinkle mixing well;
- Transfer to an 18 cm greased shape with butter;
- Bake in a preheated oven at 180°C for about 35 minutes or until golden brown.
