Snack time can be tastier with this cornmeal cake with coconut!


  • 3 whole eggs

  • 1 and 1/2 cup wheat flour

  • 1 and 1/2 cup sugar

  • 1 and 1/2 cup cornmeal

  • 1 tablespoon baking powder

  • 200 ml whole milk

  • 150 ml of oil

  • Grated coconut to taste


  • In a bowl place the eggs, sugar and stir well for about 2 minutes.
  • Add the oil and mix again. Then add the sifted cornmeal and stir some more.
  • Put the sifted wheat flour and mix well. Add the milk and mix for another 3 minutes.
  • Add the baking powder and stir to homogenize the dough. Then transfer it to a greased and infarcted shape with cornmeal.
  • Preheat the oven to 180º₢, sprinkle grated coconut over the cake and bake for about 30 to 35 minutes, or until a toothpick comes out clean when inserted into the dough.
  • Unmold the cake after it has cooled to room temperature, cut as you prefer and the cornmeal and coconut cake recipe is ready.
