There’s no one who doesn’t like the result of this corn and cornmeal cake!

Ingredients

  • 3 whole eggs

  • 1 cup and 1/2 (tea) cornmeal

  • 1 cup (tea) sugar

  • 1 can of green corn (200 grams)

  • 1 tablespoon of baking powder

  • 1 pinch of salt

  • 100 ml of oil

  • 240 ml of milk

Directions

  • In a blender add the eggs and sugar, cover and blend for 2 minutes.
  • Add the milk, oil and drained green corn, cover again and beat for another 1 minute.
  • Add the salt and beat to mix. 
    In another bowl add the cornmeal, the blender mixture and mix with a whisk or spoon.
  • Add the yeast and mix again. 
    Then pour the dough into a pan greased with butter or margarine and cornmeal.
  • Place in the preheated oven at 180º₢ and bake the cake for approximately 40 minutes.
  • After the cake is cold, unmold it if you prefer and the corn and cornmeal cake is ready to serve.
