Ingredients
3 whole eggs
1 cup and 1/2 (tea) cornmeal
1 cup (tea) sugar
1 can of green corn (200 grams)
1 tablespoon of baking powder
1 pinch of salt
100 ml of oil
240 ml of milk
Directions
- In a blender add the eggs and sugar, cover and blend for 2 minutes.
- Add the milk, oil and drained green corn, cover again and beat for another 1 minute.
- Add the salt and beat to mix.
In another bowl add the cornmeal, the blender mixture and mix with a whisk or spoon. - Add the yeast and mix again.
Then pour the dough into a pan greased with butter or margarine and cornmeal. - Place in the preheated oven at 180º₢ and bake the cake for approximately 40 minutes.
- After the cake is cold, unmold it if you prefer and the corn and cornmeal cake is ready to serve.
