Coconut Cake with Orange

Ingredients
4 whole eggs
1 ripe pear or bay orange
3/4 cup (tea) oil (180 ml)
1 and 1/2 cup (tea) of sugar (270 grams)
200 grams of finely grated coconut (2 packets)
1 tablespoon baking powder for cake (12 grams)
Directions
- Unite a form with butter or margarine, sprinkle some grated coconut, spread well and reserve.
- Divide the unpeeled orange into 4 parts.
Remove the middle white part of each part, the seeds and the tips.
Divide each piece into 2 parts and set aside. - In the blender add the eggs, the chopped orange, the sugar, the oil and beat for 3 minutes.
- Transfer the mixture to another container, add the fine grated coconut and mix very well.
- Add the baking soda and mix until homogenized.
Then pour the dough into the greased and sprinkled with grated coconut. - Bake in a preheated oven at 180º₢ for approximately 40 to 45 minutes, or until golden on top.
- Unmold the orange coconut cake after it cools down and it is ready to cut and serve.
