Ingredients
3 whole eggs
2 teaspoons chemical baking powder
1 tablespoon sweetener or sugar
1 box of gluten-free and lactose-free cream (200 grams)
200 grams unsweetened shredded coconut
pinch of salt
Directions
- Add the eggs, sweetener or sugar, a pinch of salt to a bowl and mix well.
- Put the cream of milk and the grated unsweetened coconut little by little while mixing the ingredients.
- After the mixture is homogeneous, cover with aluminum paper or plastic film and let it hydrate for 20 minutes.
- Add the baking soda, mix until the dough is uniform and transfer to a greased shape.
- Preheat the oven to 180º₢, place the cake and bake at 200º₢ for about 35 minutes.
- Unmold the coconut cake when it is already cold and it is ready to be cut and served.
