Ingredients
2 boneless, skinless chicken breasts, cut into small cubes
1 small onion, chopped
2 garlic cloves, chopped
1 carrot, chopped
1 stalk of celery, chopped
1 cup mushrooms, sliced (optional)
1 can of tomato sauce (approximately 400g)
1/2 cup chicken broth
1 teaspoon of olive oil
1 teaspoon of vegetable oil
Salt and pepper to taste
Fresh basil leaves (optional)
2 tablespoons of butter
2 tablespoons of wheat flour
2 cups of milk
Salt and nutmeg to taste
9 to 12 sheets of lasagna pasta (pre-cooked if necessary)
2 cups of grated mozzarella cheese
1/2 cup grated parmesan cheese
Directions
- In a large pan, heat the olive oil and oil over medium heat.
Add the onion, garlic, carrot and celery, and sauté for about 5 minutes, until soft. - Add the cut chicken and cook until golden on all sides.
Season with salt and pepper to taste. - If using mushrooms, add them to the pan and cook for another 3-4 minutes.
- Pour the tomato sauce and chicken broth into the pan.
Bring the mixture to a boil, then reduce the heat and simmer for about 15-20 minutes, until the chicken is cooked through and the sauce has thickened.
Add fresh basil leaves if desired. - While the chicken filling is cooking, prepare the white sauce.
In a separate pan, melt the butter over medium heat.
Add the wheat flour and mix well until it forms a paste.
Gradually add the milk, stirring constantly until the sauce thickens. - Season with salt and nutmeg to taste.
- Preheat the oven to 180°C.
- In a large baking dish, assemble the lasagna in layers.
Start with a thin layer of white sauce on the bottom of the pan, followed by a layer of lasagna noodles. - Then add half of the chicken filling, more white sauce and a layer of mozzarella cheese.
Repeat layers until all ingredients are used, finishing with grated Parmesan cheese on top. - Cover the baking tray with aluminum foil and place in the preheated oven for 25-30 minutes.
Remove the foil and bake for another 10-15 minutes, until the lasagna is golden and bubbly. - Let the lasagna rest for a few minutes before cutting into portions and serving.
