Ingredients
3 eggs
200 ml coconut milk
200 grams of finely grated coconut
1 can of condensed milk (395g)
1 cup (tea) cornstarch (110g)
1 tablespoon baking powder for cake (12g)
1 pinch of salt
Directions
- Add the eggs, coconut milk, condensed milk to the blender and blend for 2 minutes.
- Place the grated coconut, cornstarch, a pinch of salt and the blended ingredients in a container.
- Mix well until the ingredients are incorporated. Add the yeast and mix until homogenized.
- Pour the dough into a greased pan sprinkled with grated coconut and spread.
- Bake for around 35 to 40 minutes in an oven preheated to 180º₢.
- Wait for it to cool before cutting if you prefer and the cocada cake is ready to eat.
