2 cups (approximately 300g) shelled, unsalted peanuts
1-2 tablespoons peanut oil or coconut oil (optional, depending on desired consistency)
A pinch of salt (optional, depending on taste)
Sweetener to taste (optional, such as honey, maple syrup, coconut sugar, or sweetener of your choice)
Directions
- Preheat the oven to 180°C. Spread the peanuts on a baking sheet in an even layer. Roast for about 10-15 minutes, stirring occasionally, until the peanuts are lightly browned and fragrant.
- Remove the peanuts from the oven and let them cool for a few minutes.
- If the peanuts still have their shells on, rub them gently between your hands or place them in a clean kitchen towel and rub to remove most of the shells.
- Place the roasted peanuts in a food processor. Pulse a few times to start breaking down the peanuts.
- If you want a creamier paste, add the peanut oil or coconut oil little by little, while the food processor is running, until you reach the desired consistency. The oil helps soften the paste.
- Add a pinch of salt and sweetener to taste, if using.
- Continue processing the peanuts until you obtain a creamy and homogeneous paste. You may need to stop and scrape the sides of the food processor a few times during the process.
- Transfer the peanut butter to an airtight container and store at room temperature for up to two weeks or in the refrigerator for up to a month.
