Ingredients
500g carioquinha beans or string beans
200g diced smoked bacon
200g Calabrian sausage, sliced
1 large chopped onion
3 cloves of garlic, chopped
2 cups of cassava flour
1 bunch of kale, finely sliced
Salt to taste
Green scent to taste (parsley and chives)
Directions
- Cook the beans in salted water until they are soft but still firm. Drain and reserve.
- In a large frying pan, fry the bacon until it starts to brown.
- Add the pepperoni sausage and fry until it is golden brown.
- Add the chopped onion and garlic and sauté until the onion is transparent.
- Mix the cooked beans in the pan with the fried ingredients. Stir well to incorporate the flavors.
- In another pan, heat some oil and add the cassava flour.
- Stir constantly until the flour is lightly golden and crunchy.
- Add the farofa to the bean mixture in the skillet and stir well.
- Add the sliced ​​kale and stir until it is slightly wilted.
- Check the seasoning and adjust the salt if necessary.
- Sprinkle green scent on top of the ready-made tropeiro beans.
- Serve hot as a side dish or main dish. It can be accompanied by white rice, farofa and other garnishes of your choice.
