Ingredients
1 liter of milk
1 glass of coconut milk (200ml)
1 cup grated coconut (unsweetened)
1 cup cornstarch
2 cups of sugar
Caramel sauce (optional)
Directions
- If you wish to unmold the dish, grease a pudding mold with a little oil or butter and set aside.
- Mix the cornstarch in a glass with a little milk until completely dissolved. Reserve.
- In a pan, add the remaining milk, coconut milk, grated coconut and sugar.
- Cook over medium heat, stirring constantly to prevent lumps from forming.
- When the mixture starts to boil, add the cornstarch dissolved in the milk, stirring continuously.
- Continue stirring until the mixture thickens and reaches the consistency of a cream.
- Pour the mixture into the pudding mold (or into individual pots, if you prefer).
- Let it cool at room temperature for a few minutes before putting it in the fridge.
- Place the manjar in the refrigerator for at least 4 hours or until it is firm.
- If you chose to unmold, before serving, run a knife around the edge of the mold to loosen the flavor.
- Place a serving plate over the pan and turn it upside down. The delicacy should come loose and stay on the plate.
- Serve the coconut delicacy chilled, with caramel sauce if desired.
