Ingredients

  • 1 liter of coconut milk

  • 1 cup of sugar

  • 1 cup cornstarch (cornstarch)

  • 1/2 cup grated coconut

  • 1 pinch of salt

  • Caramel sauce (optional)

  • Grated coconut and prunes to decorate (optional)

Directions

  • In a pan, mix the coconut milk, sugar, cornstarch, grated coconut and salt. 
    Stir well to ensure there are no lumps.
  • Place the pan over medium heat and continue stirring constantly. 
    The mixture will begin to thicken as the cornstarch cooks.
  • Make sure to stir well to prevent it from sticking to the bottom of the pan.
  • Continue cooking and stirring for about 10-15 minutes, until the mixture becomes thick and starts to pull away from the sides of the pan.
  • When ready, pour the manjar into a pudding mold or individual bowls.
  • Let cool to room temperature, then refrigerate for a few hours or until very firm.
  • If you wish, you can make a caramel sauce to serve on top of the dish. 
    Just melt sugar in a pan until it turns golden and pour it over the dish when serving.
  • Garnish with grated coconut and prunes, if desired.
  • Serve the coconut delicacy chilled and enjoy!
