Ingredients
1 liter of coconut milk
1 cup of sugar
1 cup cornstarch (cornstarch)
1/2 cup grated coconut
1 pinch of salt
Caramel sauce (optional)
Grated coconut and prunes to decorate (optional)
Directions
- In a pan, mix the coconut milk, sugar, cornstarch, grated coconut and salt.Â
Stir well to ensure there are no lumps. - Place the pan over medium heat and continue stirring constantly.Â
The mixture will begin to thicken as the cornstarch cooks. - Make sure to stir well to prevent it from sticking to the bottom of the pan.
- Continue cooking and stirring for about 10-15 minutes, until the mixture becomes thick and starts to pull away from the sides of the pan.
- When ready, pour the manjar into a pudding mold or individual bowls.
- Let cool to room temperature, then refrigerate for a few hours or until very firm.
- If you wish, you can make a caramel sauce to serve on top of the dish.Â
Just melt sugar in a pan until it turns golden and pour it over the dish when serving. - Garnish with grated coconut and prunes, if desired.
