This savory onion roasted chicken breast is so easy to make, you won’t believe it!

Ingredients

  • 1 whole chicken breast

  • 2 minced garlic cloves

  • 3 to 5 sliced ​​onions

  • Juice of 1 squeezed lemon

  • Chili pepper to taste

  • Chimichurri to taste

  • Paprika to taste

  • Saffron to taste

  • Olive oil to taste

  • Salt to taste

Directions

  • Remove the excess fat from the chicken, then soak it in water with vinegar for 20 minutes and rinse well.
  • Season with lemon juice, salt, chopped garlic, red pepper, chimichurri, paprika and saffron to taste.
  • Spread the spices evenly across the chicken breast and marinate for 20 minutes to an hour, or preferably overnight in the refrigerator.
  • Add a little olive oil to the pressure cooker and line the entire bottom with the sliced ​​onions.
  • Place the chicken in the pan and add the marinade broth. 
    Cover and cook for 20 minutes after pressing on medium to high heat.
  • Transfer the chicken with the caramelized onions to a plate or platter if you prefer and it is ready to be sliced ​​and served.
