Lactose-free and Gluten-free Coconut Cake

This lactose-free and gluten-free coconut cake makes our day tastier and lighter!

Ingredients

  • 3 whole eggs

  • 1 cup cornstarch (100 grams)

  • 1 can of lactose-free condensed milk (395 grams)

  • 1 tablespoon baking powder for cake (12 grams)

  • 200 grams of grated coconut (in flakes, finely grated or fresh)

  • 200 ml of coconut milk

Directions

  • Place the eggs, condensed milk and coconut milk in the blender, cover and beat for 1 minute.
  • Add the cornstarch and grated coconut, cover again and beat for 4 to 5 minutes.
  • Add the baking powder, beat for 30 seconds and pour the dough into a greased cake tin.
  • Bake the cake for about 40 to 45 minutes in a preheated oven at 180º₢.
  • After cooling at room temperature, unmold the coconut cake and it is ready to eat.
