1 puff pastry or shortcrust pastry (ready-made or homemade)
200g diced bacon (or other type of meat, such as ham, shredded chicken, etc.)
1 medium chopped onion
1 cup shredded cheese (you can use cheddar cheese, swiss cheese, cheese, etc.)
4 eggs
1 cup heavy cream (or substitute whole milk)
Salt and pepper to taste
Nutmeg (optional)
Chopped fresh herbs (optional, such as parsley, chives, basil)
Directions
- Preheat the oven to 180°C.
- In a large skillet, fry the diced bacon until golden and crispy.Â
If you prefer, you can use another meat of your choice.Â
Remove the bacon from the skillet and set aside. - In the same skillet, sauté the chopped onion until soft and lightly golden.Â
Remove from heat and set aside. - In a large bowl, beat the eggs with the cream (or milk) until you get a homogeneous mixture.
- Season with salt, pepper and nutmeg to taste.Â
Add chopped fresh herbs, if desired. - Line a quiche mold with puff pastry or shortcrust pastry, pressing the edges well and making a few holes in the bottom with a fork to prevent the dough from rising too much during baking.
- Spread the fried bacon and sauteed onion over the dough.
- Pour the egg and cream mixture over the filling in the mold.
- Sprinkle grated cheese on top.
- Place in the preheated oven and bake for about 30 to 35 minutes, or until the quiche is golden brown and set in the center.
- Remove from oven and let cool slightly before serving.Â
The quiche can be served hot, warm or at room temperature.
