Ingredients
2 cooked and shredded chicken breasts
1 medium chopped onion
2 minced garlic cloves
2 tablespoons of butter
1 can of green corn
1 can of peas
1 cup cream cheese
1/2 cup of milk
1/2 cup grated parmesan cheese
Salt and pepper to taste
Straw potato to decorate
Directions
- In a large pan, melt the butter and sauté the onion and garlic until golden.
- Add the shredded chicken to the pan and season with salt and pepper to taste.
Sauté for a few minutes. - Add the green corn and peas to the pan and mix well.
- Then add the cream cheese and milk, stirring until you get a creamy and homogeneous sauce.
- Lastly, add half of the grated Parmesan cheese and stir until completely melted.
- Transfer the mixture to a greased refractory.
- Sprinkle the remaining Parmesan cheese over the fricassee.
- Bake in a preheated oven at 200°C for approximately 20 minutes, or until browned and lightly browned.
- Remove from the oven and decorate with straw potatoes before serving.
