Shrimp in Pineapple

Made in a single pan, this shrimp is grilled, prepared with onions, peppers, pineapple and a coconut milk-based sauce. 
Finally, it is plated in the fruit itself and au gratin in the oven, leaving the food beautiful and full of style.

Ingredients

  • 1 pineapple

  • 300g shrimp

  • 1 bottle of coconut milk

  • 1/2 box of milk cream

  • 1/2 onion

  • 1/2 yellow bell pepper

  • 1/2 green pepper

  • 1/2 red bell pepper

  • 100g parmesan cheese

  • Parsley to taste

  • Salt to taste

  • Paprika to taste

  • Black pepper to taste

Directions

  • Cut the pineapple in half. 
    Remove the pulp using a knife and a spoon. 
    Reserve half of the pineapple pulp.
  • Season the shrimp with the lemon juice, salt, pepper and paprika. 
    Mix and book.
  • Chop the onion and peppers.
  • In a skillet, water olive oil and give the prawns for 3 minutes on each side. 
    Restire and book.
  • In the same skillet, add the onion and sauté.
  • Add the peppers and sauté for 3 minutes.
  • Put the pineapple, mix well. 
    Add coconut milk and sour cream. 
    Adjust seasonings with salt and pepper.
  • Once it boils, add the prawns and cook for another 3 minutes. 
    Finish with chopped parsley.
  • Stuff the pineapple, sprinkle with Parmesan cheese and bake in a preheated oven at 200 degrees for 20 minutes.
  • Serve with white rice.
