Vatapá is a thick cream made with shrimp, bread, coconut milk, peanuts and spices.
It is delicious served with white rice.

Here is a classic recipe for vatapá, a traditional dish of Brazilian cuisine, especially popular in the Northeast region.

Ingredients

  • 500g peeled and cleaned prawns

  • 2 stale French bread (or about 150g of stale bread)

  • 400 ml of coconut milk

  • 1 cup roasted, skinless peanuts

  • 1 medium chopped onion

  • 2 minced garlic cloves

  • 1 tablespoon palm oil

  • 1 tablespoon olive oil

  • 1 tablespoon grated ginger

  • 1 tablespoon chopped coriander

  • 1 tablespoon lemon juice

  • Salt to taste

  • Pepper to taste

  • Water if needed

Directions

  • In a pan, cook the prawns in salted water for about 5 minutes, until they turn pink. 
    Run and book.
  • In another pan, heat the palm oil and olive oil over medium heat. 
    Add chopped onion, garlic and grated ginger.
  • SautĂ© for a few minutes, until the onion is translucent and the spices are aromatic.
  • Meanwhile, in a bowl, break the buns into small pieces and cover them with the coconut milk. 
    Let it sit for a few minutes to soften the bread.
  • In the blender, place the moistened bread, the toasted peanuts, half of the cooked prawns and the sauteed onion, garlic and ginger. 
    Beat well until you get a homogeneous mixture. 
    If necessary, add a little water to help liquefy the cream.
  • Transfer the mixture from the blender to the saucepan and place over medium heat. 
    Add the rest of the prawns, the lemon juice and the chopped cilantro. 
    Stir well and let cook for about 15-20 minutes, stirring occasionally, until the vatapá thickens and the flavors blend.
  • Taste the vatapá and adjust salt and pepper to taste.
  • When the vatapá is ready, remove it from the heat and serve hot with white rice.
