Ingredients

  • 1 can of drained green corn (approximately 200g)

  • 3 eggs

  • 1/2 cup vegetable oil

  • 1 cup of sugar

  • 1 cup fine cornmeal (cornmeal)

  • 1/2 cup of milk

  • 1 tablespoon baking powder

Directions

  • Preheat the oven to 180°C (medium temperature). 
    Grease a round pan with butter and flour, or line it with baking paper to prevent the cake from sticking.
  • In a blender, place the drained corn, eggs, oil and sugar. 
    Beat well until you get a homogeneous mixture.
  • Add the corn flour (cornmeal) and milk to the blender. 
    Beat again until the dough is smooth and uniform.
  • Turn off the blender and add the baking powder. 
    Stir gently with a spoon or spatula, just to incorporate the yeast into the dough.
  • Pour the dough into the previously prepared pan and place in the preheated oven.
  • Bake the cake for approximately 40 minutes or until a toothpick inserted into the center of the cake comes out clean (no residue left).
  • Remove the cake from the oven and let it cool before unmolding.
