The tapioca and coconut cake has an irresistibly fluffy and very tasty dough!

Ingredients

  • 3 eggs

  • 2 tablespoons of butter or margarine

  • 1 tablespoon baking powder

  • 1 cup (tea) of cornstarch

  • 1 cup (tea) of grated coconut

  • 1 cup (tea) of sugar

  • 3/4 cup (tea) of hydrated tapioca

  • 1/2 cup (tea) of milk

Directions

  • In a blender, place the eggs, milk, butter or margarine, sugar and beat for 3 minutes.
  • Add the grated coconut, cornstarch, hydrated tapioca and mix well with a spoon or spatula.
  • Beat again for 1 minute, add the yeast and beat quickly just to mix.
  • Pour the dough into a baking dish greased with butter or margarine.
  • Bake in a preheated oven at 190°₢ for approximately 40 to 50 minutes, or until golden brown.
  • Let it cool a little at room temperature before serving, cut and it’s ready.
