Tapioca Cake with Coconut

Ingredients
3 eggs
2 tablespoons of butter or margarine
1 tablespoon baking powder
1 cup (tea) of cornstarch
1 cup (tea) of grated coconut
1 cup (tea) of sugar
3/4 cup (tea) of hydrated tapioca
1/2 cup (tea) of milk
Directions
- In a blender, place the eggs, milk, butter or margarine, sugar and beat for 3 minutes.
- Add the grated coconut, cornstarch, hydrated tapioca and mix well with a spoon or spatula.
- Beat again for 1 minute, add the yeast and beat quickly just to mix.
- Pour the dough into a baking dish greased with butter or margarine.
- Bake in a preheated oven at 190°₢ for approximately 40 to 50 minutes, or until golden brown.
- Let it cool a little at room temperature before serving, cut and it’s ready.
