Ingredients
3 whole eggs
2 cups (tea) of uncooked rice or 450 grams (soak for at least 4 hours)
1 tablespoon baking powder for cake (15 grams)
1 cup (tea) sugar (200 grams)
1 bottle of coconut milk (200ml)
50 grams of grated coconut
200 ml of oil
Directions
- Soak the rice for 4 hours in water until completely covered and transfer the drained rice to a blender.
- Add the coconut milk and beat very well until the rice breaks down.
- Add the eggs, sugar, oil and beat again for another 1 minute.
- Place the grated coconut and baking soda, beat to mix and transfer the dough to a greased shape.
- Preheat the oven to 180º₢ and bake the cake for about 40 minutes.
- Wait for the cake to cool, unmold it if you prefer and the rice cake is ready.
