Ingredients

  • 1 medium eggplant

  • 1 medium zucchini

  • 1 medium onion

  • 1 red pepper

  • 1 yellow pepper

  • 2 medium tomatoes

  • 3 cloves of garlic

  • 2 tablespoons of olive oil

  • 1 teaspoon herbs de Provence

  • Salt and pepper to taste

Directions

  • Start by cutting all the vegetables into thin slices or small cubes. 
    Eggplant and zucchini can be cut into thin slices or cubes. 
    The onion, peppers and tomatoes must be cut into small cubes.
  • Heat a tablespoon of olive oil in a large skillet over medium heat. 
    Add the chopped onion and chopped garlic and sauté for a few minutes, until soft and lightly browned.
  • Add the chopped peppers and saute for a few more minutes until they are soft too.
  • Then add the eggplant and zucchini to the skillet. 
    Season with salt, pepper and herbs de Provence. 
    Sauté everything together for a few more minutes, stirring occasionally.
  • Lastly, add the chopped tomatoes to the skillet and cook for another 5-10 minutes, until all the vegetables are tender but still hold their shape.
  • Adjust seasoning as needed and drizzle with an additional tablespoon of olive oil.
  • Remove from the heat and serve the ratatouille hot as a side dish or main dish. 
    You can also add some chopped fresh basil leaves on top if you wish.
