Ingredients

  • 250g pasta (can be penne, fusilli, farfalle, or another type of your choice)

  • 1 cup cherry tomatoes, cut in half

  • 1 cup cucumber, diced

  • 1/2 cup black olives, sliced

  • 1/2 cup feta cheese (or other white cheese of your choice), cubed

  • 1/4 cup red onion, chopped

  • 1/4 cup red bell pepper, diced

  • 1/4 cup yellow pepper, diced

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 1 lemon juice

  • Salt and pepper to taste

  • Fresh basil leaves (optional, for garnish)

Directions

  • Cook the pasta according to package instructions in boiling salted water. 
    Drain and set aside to cool.
  • In a large bowl, combine the cooked pasta with the cherry tomatoes, cucumber, olives, feta cheese, red onion and peppers.
  • In another small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, salt, and pepper. 
    Adjust the seasoning according to your taste.
  • Pour the dressing over the pasta salad and mix well so that all the ingredients are well incorporated.
  • If desired, garnish the salad with some fresh basil leaves.
  • Cover the bowl with cling film and refrigerate for at least 30 minutes before serving. 
    Leaving the salad in the fridge helps the flavors blend and makes the salad even tastier.
