To make your Paella, use the ingredients below and follow the step-by-step instructions on how to prepare it.

Ingredients

  • 2 tablespoons of olive oil

  • 1 large onion, chopped

  • 3 garlic cloves, minced

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 2 medium tomatoes, seeded and chopped

  • 2 cups of paella rice

  • 4 cups vegetable or chicken broth

  • 1 teaspoon turmeric powder

  • 1 teaspoon sweet paprika

  • 200g chicken cut into pieces

  • 200g peeled shrimp

  • 200g squid cut into rings

  • 200g of cleaned mussels

  • 200g of clean clams

  • Salt to taste

  • Chopped parsley to garnish

Directions

  • In a paellera or large skillet, heat the oil over medium heat.
  • Add the onion, garlic, peppers and sauté until soft.
  • Add the chopped tomatoes and cook for a few more minutes, until they start to break down.
  • Add chicken to pan and cook until browned on all sides.
  • Then add the rice and stir well so that it is coated with oil and spices.
  • Add the turmeric powder, paprika and mix well.
  • Pour the vegetable or chicken broth into the pot and stir gently.
  • Let it cook over medium-low heat for about 15 minutes, or until the rice is almost cooked.
  • Place the prawns, squid, mussels and clams on top of the rice.
  • Season with salt to taste and cover the pan with aluminum foil. 
    Cook for another 5-10 minutes, or until the seafood is cooked through.
  • Remove the foil and let the paella rest for a few minutes before serving.
  • Garnish with chopped parsley and serve hot.
