Ingredients
2 tablespoons of olive oil
1 large onion, chopped
3 garlic cloves, minced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
2 medium tomatoes, seeded and chopped
2 cups of paella rice
4 cups vegetable or chicken broth
1 teaspoon turmeric powder
1 teaspoon sweet paprika
200g chicken cut into pieces
200g peeled shrimp
200g squid cut into rings
200g of cleaned mussels
200g of clean clams
Salt to taste
Chopped parsley to garnish
Directions
- In a paellera or large skillet, heat the oil over medium heat.
- Add the onion, garlic, peppers and sauté until soft.
- Add the chopped tomatoes and cook for a few more minutes, until they start to break down.
- Add chicken to pan and cook until browned on all sides.
- Then add the rice and stir well so that it is coated with oil and spices.
- Add the turmeric powder, paprika and mix well.
- Pour the vegetable or chicken broth into the pot and stir gently.
- Let it cook over medium-low heat for about 15 minutes, or until the rice is almost cooked.
- Place the prawns, squid, mussels and clams on top of the rice.
- Season with salt to taste and cover the pan with aluminum foil.Â
Cook for another 5-10 minutes, or until the seafood is cooked through. - Remove the foil and let the paella rest for a few minutes before serving.
- Garnish with chopped parsley and serve hot.
