Making this cassava broth with sausage to ward off the cold is too easy!

Ingredients

  • 700 grams of cassava

  • 2 minced garlic cloves

  • 1 segment and 1/2 of pepperoni sausage

  • 1 tablespoon oil

  • 1 chopped onion

  • 1 chopped tomato

  • Green smell to taste

  • Spicy paprika to taste

  • Water

  • Salt

Directions

  • Peel the cassava and cut it into pieces. 
    Place in a pressure cooker with water until covered and add a little salt.
  • Cover the pan and cook for 10 minutes after taking the pressure. 
    Release the pressure, transfer the cassava to a container and reserve the cooking water.
  • In another pan, pour a drizzle of oil, add the diced sausage and fry well, stirring constantly.
  • Add the garlic cloves and brown without stopping stirring. 
    Add the chopped onion and saute for 2 minutes, always stirring well.
  • Add the spicy paprika to taste and the chopped tomato, saute for another 2 minutes, stirring occasionally to avoid burning, and set aside.
  • Place the cooking water and the cassava pieces in the blender, cover and blend very well.
  • Transfer the beaten cassava broth to the pan with the ingredients, light the fire, add more salt if necessary, mix and boil for 10 minutes.
  • Finish adding chopped green smell to taste and turn off the fire. 
    Mix well and the cassava broth with sausage is ready.
