Ingredients
2 cups whole wheat flour
1 teaspoon powdered yeast
1 teaspoon of bicarbonate of soda
1/2 teaspoon cinnamon powder
1/4 teaspoon of salt
3 mashed ripe bananas
1/2 cup brown sugar
1/4 cup vegetable oil
1/4 cup milk (you can substitute plant-based milk if you prefer)
2 eggs
1 teaspoon vanilla extract
Directions
- Preheat the oven to 180°C.Â
Unite a cake form with oil or butter and sprinkle with whole wheat flour. - In a medium bowl, combine whole wheat flour, baking powder, baking soda, ground cinnamon and salt.Â
Reserve. - In another bowl, mix mashed bananas, brown sugar, vegetable oil, milk, eggs and vanilla.Â
Mix well until you get a homogeneous mass. - Add the dry ingredient mixture to the bowl with the banana paste and mix gently until all ingredients are incorporated.
- Avoid stirring too much so as not to make the cake heavy.
- Pour the batter into the prepared pan and spread evenly.
- Place in the preheated oven and bake for about 40 to 45 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- Remove the cake from the oven and let it cool in the pan for a few minutes.Â
Then transfer it to a wire rack to cool completely. - When the cake is completely cool, you can sprinkle it with powdered sugar or decorate it to taste.
