Ingredients
2 cups of cassava flour (can be fine or coarse, depending on your preference)
1/4 cup butter or oil
1 medium onion, chopped into cubes
2 garlic cloves, chopped
Salt to taste
Black pepper to taste
Green chives (parsley and chives) chopped to taste
Directions
- In a large skillet, melt the butter (or heat the oil) over medium heat.
- Add the chopped onion and sauté until it turns golden and translucent.
- Add the chopped garlic and sauté for a few more minutes, until the garlic is golden and aromatic.
- Add the cassava flour to the pan and stir well so that it absorbs the butter (or oil) and is well mixed with the onion and garlic.
- Cook the farofa for a few minutes, stirring occasionally, until it turns golden and crispy.
Be careful not to burn. - Season the farofa with salt, black pepper and green chilli to taste.
Stir well to distribute the seasonings. - Remove the skillet from the heat and let the farofa cool slightly before serving.
- Serve farofa as a side dish for dishes such as feijoada, barbecue, roast chicken, fried fish, among others.
