Ingredients

  • 1 cup white rice

  • 2 cups of water

  • 4 cups of milk

  • 1 can of condensed milk

  • 1 teaspoon vanilla essence

  • Lemon peel (optional)

  • Cinnamon powder to taste

  • A bit of salt

Directions

  • In a pan, place the rice and water and lead to medium fire. 
    Cook until the rice is tender and the water is absorbed.
  • Add the milk to the pan and bring to a boil over medium heat. 
    Stir occasionally to prevent the rice from sticking to the bottom of the pan.
  • When the rice is cooked and the milk is boiling, add the condensed milk, vanilla essence, lemon peel (if using) and a pinch of salt. 
    Mix well.
  • Continue cooking over medium-low heat, stirring regularly, until the rice pudding starts to thicken and reaches the desired consistency. 
    This usually takes about 20 to 30 minutes.
  • Remove the lemon peel and discard it. 
    Transfer the rice pudding to individual bowls or a large bowl.
  • Allow to cool at room temperature for a few minutes, then refrigerate to cool completely.
  • Before serving, sprinkle cinnamon powder over the rice pudding.
