Ingredients

  • 2 cooked and shredded chicken breasts

  • 1 medium chopped onion

  • 2 minced garlic cloves

  • 2 tablespoons of butter

  • 1 can of green corn

  • 1 can of peas

  • 1 cup cream cheese

  • 1/2 cup of milk

  • 1/2 cup grated parmesan cheese

  • Salt and pepper to taste

  • Straw potato to decorate

Directions

  • In a large pan, melt the butter and sauté the onion and garlic until golden.
  • Add the shredded chicken to the pan and season with salt and pepper to taste. 
    Sauté for a few minutes.
  • Add the green corn and peas to the pan and mix well.
  • Then add the cream cheese and milk, stirring until you get a creamy and homogeneous sauce.
  • Lastly, add half of the grated Parmesan cheese and stir until completely melted.
  • Transfer the mixture to a greased refractory.
  • Sprinkle the remaining Parmesan cheese over the fricassee.
  • Bake in a preheated oven at 200°C for approximately 20 minutes, or until browned and lightly browned.
  • Remove from the oven and decorate with straw potatoes before serving.
