Ingredients

  • 500g of baroa potato (cassava-salsa) peeled and cut into cubes

  • 1 medium chopped onion

  • 2 minced garlic cloves

  • 2 tablespoons of olive oil

  • 1 liter of vegetable broth

  • Salt and pepper to taste

  • Chopped parsley to garnish

Directions

  • In a large pan, heat the olive oil over medium heat.
  • Add chopped onion and garlic and sauté until golden and fragrant.
  • Add the baroa potato cubes and sauté for a few minutes.
  • Add the vegetable broth to the pot, enough to cover the potatoes.
  • Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to medium-low.
  • Cook for about 20-25 minutes, or until the sweet potatoes are tender and can be easily mashed with a fork.
  • Remove the pan from the heat and, with the aid of a mixer or blender, beat the soup until obtaining a creamy consistency.
  • Adjust seasoning if necessary.
  • Serve the soup hot and garnish with chopped parsley on top.
