Bakery Cornmeal Bread

Many are surprised by how easy it is to make bakery cornbread that melts in your mouth!

Ingredients

  • 250 grams of wheat flour

  • 250 grams of mimoso cornmeal

  • 2 whole eggs

  • 1 egg yolk for brushing

  • 1 teaspoon salt

  • 1 cup (tea) of sugar

  • 1 teaspoon fennel (or to taste)

  • 1 heaped tablespoon baking powder

  • 3 tablespoons butter or margarine

Directions

  • In a bowl beat the eggs for about 1 minute with a whisk or fork.
  • Add sugar, butter or margarine and mix well. 
    Put the salt, cornmeal and mix well.
  • Add the wheat flour, fennel and stir again. 
    Add the baking soda and mix the dough with your hands until you disgrace them.
  • Form balls with portions of the dough, flatten them slightly to shape the bread and place them on a greased baking sheet, leaving space between them.
  • Brush the egg yolk over the bread and bake them in a preheated oven at 180º₢ for about 25 to 30 minutes, or until golden brown on the bottom.
  • Wait for the cornmeal bread to cool down a bit before taking it out of the pan so it doesn’t break and is ready to serve and eat.
