Salsa Criolla:

Ingredients

  • 2 lemons

  • 150 ml soybean oil

  • 150 ml extra virgin olive oil

  • 200 grams of chopped onion

  • 2 cloves of minced garlic (optional)

  • 1 bunch of chopped chives

  • 1 kg of very ripe Italian tomatoes

  • 4 tablespoons apple cider vinegar

  • Tabasco pepper to taste

  • Ground pepper to taste

  • Salt to taste

Directions

  • Wash the tomatoes, cut the surface of the skin and place them in hot water for 3 minutes, until the skin begins to come off.
  • Quickly place the tomatoes in ice water and remove the skin. Cut the tomatoes in half and remove all the seeds.
  • Chop the tomatoes into small pieces and transfer them to a container.
  • Add the chopped onions and chives, lemon juice, apple cider vinegar, olive oil and soybean oil.
  • Mix well, season with Tabasco pepper, ground pepper and salt to taste and mix again.
  • Finish by adding the chopped garlic, mix well and leave the recipe covered in the refrigerator for 1 day.
  • Serve salsa criolla with meats, breads, pastas and other dishes of your choice.
