Salsa Criolla:
Ingredients
2 lemons
150 ml soybean oil
150 ml extra virgin olive oil
200 grams of chopped onion
2 cloves of minced garlic (optional)
1 bunch of chopped chives
1 kg of very ripe Italian tomatoes
4 tablespoons apple cider vinegar
Tabasco pepper to taste
Ground pepper to taste
Salt to taste
Directions
- Wash the tomatoes, cut the surface of the skin and place them in hot water for 3 minutes, until the skin begins to come off.
- Quickly place the tomatoes in ice water and remove the skin. Cut the tomatoes in half and remove all the seeds.
- Chop the tomatoes into small pieces and transfer them to a container.
- Add the chopped onions and chives, lemon juice, apple cider vinegar, olive oil and soybean oil.
- Mix well, season with Tabasco pepper, ground pepper and salt to taste and mix again.
- Finish by adding the chopped garlic, mix well and leave the recipe covered in the refrigerator for 1 day.
- Serve salsa criolla with meats, breads, pastas and other dishes of your choice.
