Not only is this Caramelized Pineapple Cake delicious, it looks great too!

Ingredients

  • 3 whole eggs

  • 1 sliced ​​pineapple

  • 1 cup (tea) and 3/4 of wheat flour

  • 1 cup (tea) of hot milk (240 ml)

  • 1 cup (tea) sugar (200 grams)

  • 1 pack of pineapple gelatin (20 grams)

  • 1 tablespoon chemical baking powder

  • 1 pinch of salt

  • 1/2 cup (tea) of oil

  • 1 cup (tea) of water (240 ml)

  • 1 cup (tea) and 1/2 of sugar

Directions

  • Start by making the syrup: put 1 and 1/2 cups of sugar in a pan and caramelize until golden.
  • Once the caramel melts and turns golden, add 1 cup of water and boil for 5 minutes, or until the caramel melts again.
  • Transfer the syrup to a shape and spread it well. 
    Then add the pineapple slices next to each other and set aside.
  • Add the gelatine and hot milk in a glass or bowl, stir until dissolved and set aside.
  • In a container place the eggs, oil, sugar and stir well. 
    Add the sifted flour, salt, pineapple gelatin mixture and stir again.
  • Add the baking powder and stir until homogenized. 
    Pour the dough over the pineapple and bake for 40 to 50 minutes in a preheated oven at 180º₢.
  • Unmold the caramelized pineapple cake after it cools down and it is ready to serve.
